Your Host, Our Head Chef
Stefan Lercher – how it all began
“Our guests should take enough time to enjoy themselves. It’s great see people enjoying themselves and to know that they’ve eaten well.”
With these words, you can easily recognise that enjoyment – particularly where cuisine is concerned – is a top priority at the Blumenhotel. Your host and head chef, Stefan Lercher, has held this belief for a long time and this is his motivation for the delectable delights he conjures up in the kitchen. That the Blumenhotel has become an exclusive gourmet hotel is completely down to his engagement and creativity in bringing imaginative dishes to the table.
Having grown up in nearby Val Passiria, Stefan completed his training at the Hotel Majestic in Riscone. His career has seen him work in several notable gastronomic establishments. For example, he worked as a chef pastissier at the Hotel Feldmüllerhof in Campo Tures, as a sous chef at the renowned Zur Rose in Appiano and as head chef at the Zum Hirschen restaurant in Vilpiano. He was also able to show what he’s made of at restaurants abroad, for example at the Tantris in Munich and the Oscar in Zürich.
Stefan has been spoiling our guests with us culinary creations at the Blumenhotel since 2010. His imagination, passion and attention to detail helps him to create light dishes, with Tyrolean and Mediterranean influences, using fresh, natural ingredients. His team of five staff ensure that you’ll want for nothing. Each of the twelve dishes on the menu always come with the perfect wine accompaniment, if you would like it.
Stefan places high emphasis on working with regional produce and our own herb and vegetable garden is evidence of this. He makes as much as he can himself – from juices and smoothies for breakfast to dumplings and pasta for dinner. Honest cuisine and authenticity you can taste!
Our aperitif reception on Sunday evenings is definitely a highlight each week. This isn’t just the opportunity to get to know your hosts, it’s also a chance to chat with the other guests over a refreshing drink and some tasty snacks. The subsequent gala dinner is an exquisite experience, with a six-course meal and the best wines.
